Three Quick Ideas for Springtime Lamb

4Now that we've hit the warmer months of spring, there should be one thing and one thing only landing on our plates – lamb. Nothing says spring better than a juicy lamb chop or a colourful lamb salad. Whether minced, cooked or barbecued, lamb is a meat that will be enjoyed by all and can be teamed with almost anything, meaning it's an easy choice for spring dinners.

Lamb skewers with tabouli

A great option for a springtime barbecue, marinate the meat a day ahead. The hummus can also be made in advance, meaning the day of the party all you have to do is throw together a quick tabouli, quickly cook the lamb and serve with wedges of pita bread.

Greek lamb meatball salad

Great for a centrepiece, this salad is rich in flavour and easy to make. Look for good-quality meat and zesty Greek flavours and serve with delicious crumbled feta.

Lamb, pumpkin and couscous salad

Lamb and pumpkin work perfectly together and a spiced couscous gives the dish a terrific Moroccan theme. This is a great alternative to a traditional Sunday roast.
