The emphasis at Cataract is to showcase Tasmanian food products, so the menu is forever changing with the seasons. Brisbane Street Bistro is Terry Fidler's latest venture, whose previous successes include Quigley's Balfour Terrace and Fidler's on the Bay. Tucked away in a townhouse on Brisbane Street, this classic, intimate bistro features a straightforward menu filled with Modern Australian food with a French twist. In just five years it has attained awards for Best Informal Dining, Best European Restaurant and Best Stand-Alone Restaurant from the Tasmanian Hospitality Association.

Fidler's philosophy is based on the words of "Emperor of Chefs" Auguste Escoffier – the greatest dishes are always simple. Using only the finest ingredients, Fidler's dishes focus of outstanding produce cooked to perfection – be it line-caught wild fish, organic fruit and vegetables, or wild-shot game. His lamb and beef is all pasture fed, and the bacon-wrapped eye fillet with portobello mushroom, fat cut chips, cassis-scented jus and bearnaise is mouthwateringly good. Wash it down with their recommended shiraz, and you're onto a winner.
